INGREDIENTS:
1 lb.Ground Beef 1 lg.Yellow Onion, chopped
1 lb.Ground Pork 1 lg.Celery (bunch) chopped
1 lb.Bacon, diced 1 Red Onion, chopped
1 lg.Red Bell Pepper, chopped 1 lg.Green Bell Pepper, chopped
4 cups white grain rice 8 cups Chicken Broth (strong)
1 tsp.Cayenne Pepper 2 tsp.Salt
2 tsp.Ground Black Pepper 2 tsp. Ground Cumin
1 tsp.Ground Oregano 1 Tbs.Garlic Powder
2 cans Marie Calendars Mexican Style Corn Bread Mix
1. Mix corn bread according to instructions and begin to cook.
2. In large skillet, sauté bacon until slightly crisp, drain fat, and place into large pot.
3. In same large skillet, brown ground beef and ground pork, drain fat and place into pot with bacon.
4. In same large skillet, sauté onions, bell peppers and celery for about 5 minutes until they just begin to soften. Place into large pot with meat.
5. Place chicken broth into pot with meat and begin to heat to a boil.
6. While pot is being brought to a boil, combine cayenne pepper, ground brown pepper, salt, ground cumin, oregano, and garlic powder into bowl. Mix well and place into pot.
7. Add rice and stir very well.
8. Boil mixture for 3 minutes, cover and simmer until rice is done (approximately 20 minutes).
9. Serve with hot corn bread, honey and butter.
6 to 8 portions (Enough for Station 1 plus leftovers!)
